Thai Curry with Sesame & Vegetables

Get ready for a taste explosion with this delicious Thai curry recipe! The combination of vibrant flavours and nutritious vegetables will leave you feeling satisfied and uplifted. Don’t worry if you’re not an experienced cook – this recipe is easy to follow and will have you creating your own culinary masterpiece in no time.

You will need:

tofu firm
soy sauce
cinnamon
turmeric
cumin
coriander powder
sweet paprika

2 garlic
1 onion
1 red chilli
ginger
1 carrot
500 ml vegetable broth
sesame seeds
400 ml coconut milk
zucchini
broccoli
salt
cilantro
1 lime

Preparation:

Marinate
Cut the tofu into cubes.  Combine the soy sauce, sweet paprika, cinnamon, turmeric, cumin and coriander powder in a small bowl and mix with your hands.

Start by finely chopping the onion, garlic, carrot, ginger, and chilli. In a large pan, heat a drizzle of oil and sauté the chopped ingredients until they become fragrant. This will release their aromatic flavours and ensure a rich base for your curry. Add the vegetable broth, sesame seeds, and soy sauce. Blend all the ingredients using a hand blender. Pour the sesame sauce and coconut milk.

Add the tofu. As for the veggies, we have zucchini and broccoli to add a pop of colour and freshness to our dish. Slice the zucchini into thin strips and chop the broccoli into bite-sized florets. Not only will they add texture and vibrant green hues, but they’ll also provide a healthy and nutritious element to our meals. Bring to a boil and leave for about 15-20 minutes. Adjust with salt. And for the finishing touch, squeeze in some fresh lime juice to give it that tangy, refreshing twist. Garnish with cilantro.
