Tahini cauliflower
Our cauliflower roasted with potatoes, raisins, cashews, and tahini sauce is a delightful fusion of flavours and textures that will bring joy to your kitchen and your plate.
You will need:
cauliflower
potatoes
garlic powder
raisins
cashews
Tahini Sauce
tahini
water
salt
pepper
garlic powder
sweet chilli sauce
parsley
Procedure:
Preheat your oven to the roasting temperature – 205 °C. Cut the cauliflower into bite-sized florets and chop the potatoes into small chunks. Spread them out on a baking sheet and give them a nice drizzle of olive oil and garlic powder. Sprinkle on some salt and pepper for that extra kick. Toss them around until they’re evenly coated and ready to hit the oven. Add in the raisins and cashews, and give everything a good toss. The raisins will bring a touch of natural sweetness to balance out the flavours, while the cashews will add a delightful crunch. Oven for 30 minutes. Once your potatoes and cauliflower are nicely roasted and the mixture is well combined, it’s time to bring it all together.
Tahini (ground sesame seeds), salt, pepper, garlic powder, and water in a small mixing bowl and whisk to combine. Drizzle the tahini sauce, allowing it to coat every nook and cranny.
Pop the entire concoction back into the oven for a few more minutes, just enough to warm everything up and allow the flavours to meld together. Keep an eye on it, though – you don’t want anything to burn!
Serve it up hot, and don’t forget to drizzle some sweet chilli sauce on and parsley top for an extra burst of flavour.
