Green Curry Paste
Who doesn’t love a good Thai green curry paste? And the best part is that you can easily make your own at home!
Making your own Thai green curry paste is not only fun, but it allows you to customize the flavours to your liking. Want it a bit spicier? Add an extra chilli. Do you prefer a stronger ginger taste? Increase the amount of ginger in the recipe. The possibilities are endless!
Once your Thai green curry paste is ready, you can use it to make a variety of dishes. The possibilities are endless, from traditional green curries with chicken or shrimp to vegetarian options with tofu and vegetables. And let’s not forget about the aroma filling your kitchen as the curry simmers away on the stove.
We need:
2 tbsp chopped cilantro(coriander)
1/2 tsp coriander seed powder
1 tsp cumin seed
1/2 tsp black pepper powder
8 green chillis
1 red pepper
5 cloves garlic
2 stalks lemongrass
1 tsp ginger powder (or ginger)
2 red shallots
1 tsp turmeric powder
3 tbsp lemon juice
1 lime
1/2 salt
2 tbsp water
Procedure:
Combine all ingredients except water in a high-powered blender. Blend to a fine paste. Add water as needed to mix better.
Coriander
Property – Pungent, warm; lung and spleen meridians entered.
Actions – Induce sweating and promote eruption, promote digestion and direct qi downward.
Indications – Indigestion and inadequate eruption.
Cations – It is contraindicated for adequate eruption.
Pepper
Property – Pungent, hot; stomach and large intestine meridians entered.
Actions – Warm middle energizer to alleviate pain.
Indications – Stomach cold, abdominal pain, vomiting and diarrhoea
Garlic
Property – Pungent, warm; spleen, stomach, lung and large intestine meridians entered.
Actions – Resolve swelling, arrest diarrhoea, remove toxicity and kill parasites.
Indications – Scabies, swelling and boils, dysentery, diarrhoea, ancylostomiasis, enterobiasis, tuberculosis.
Cations – It is contraindicated for oral taking in case of yin deficiency with effulgent fire and people with eye disease or tooth disease or tongue disease or throat disease.
Ginger
Property – Pungent, warm; lung, spleen and stomach meridians entered.
Actions – Disperse wind-cold, warm the middle energizer to stop vomiting, and warm the lungs to stop coughing.
Indications
A. Wind-cold exterior syndrome
B. Stomach cold and vomiting syndrome
C. Cough due to cold of the lung
Cautions – It should be used with cautions for yin deficiency with internal heat and heat exuberance because it helps promote fire and injure yin.
Lemon
Property – Sour, sweet, neutral; lung and stomach meridians entered.
Actions – Promote the secretion of saliva, relieve thrist, harmonize the stomach and prevent miscarriage.
Indications – Poor appetite, stomach heat, sunstroke, vomiting during pregnancy, cough, abdominal distension.
