Grilled Aubergine
Roasted aubergine, also known as eggplant, is a delicious and versatile dish that can be enjoyed as a main course or a side dish. In this recipe, I’ll show you how to make a flavorful roasted aubergine dish with tahini, and a few other ingredients.
We need:
½ cup tahini
2 lemon juice
salt
pepper
½ cup water
2 aubergine
olive oil
1 tablespoon Za’atar
soy sauce
sunflower seeds
mint
basil leaves
Procedure:
Preheat the oven to 200°C (400°F). Cut two large aubergines lengthwise. Criss-cross pattern using a sharp knife. Drizzle a little olive oil over the cut sides of the aubergine and season with salt and pepper and za’atar. Za’atar is a Middle Eastern spice blend made from dried thyme, sesame seeds, sumac, and salt. It adds a unique and aromatic flavour to the dish. Place the aubergines, cut side up, on a baking sheet and roast in the oven for about 40-45 minutes, or until the flesh is soft and tender.
While the aubergines are roasting, you can prepare the tahini sauce. In a small bowl, whisk together 4 tablespoons of tahini, the juice of one lemon, and 2 tablespoons of water. The tahini sauce should have a creamy and smooth consistency. If it’s too thick, you can add more water to thin it out. After roasting the aubergines, remove them from the oven and let them cool for a few minutes. For some additional flavour, drizzle a tablespoon of soy sauce over the roasted aubergine.
Finally, sprinkle the dish with a handful of basil leaves, sunflower seeds and a few fresh mint leaves. Sunflower seeds provide a pleasant crunch, mint leaves a refreshing and basil leaves a herbal taste.
Serve the roasted aubergine with warm pita bread. You can enjoy this dish as a light lunch or a flavorful appetizer, perfect for vegetarians and vegans. Enjoy!

Basil – Property – Pungent, sweet, warm; lung, spleen, stomach and large intestine meridians entered.
Actions – Dispel wind and promote the flow of qi, eliminate dampness and promote digestion, activate blood and remove toxicity.
Indications – Irregular menstruation, abdominal pain, eczema, snake and insect bites, traumatic injury, diarrhoea, indigestion, urticaria and headache due to exogenous pathogenic factors.
Cautions – It is contraindicated in case of qi deficiency and blood dryness.
