Aubergine curry

Aubergine curry is a flavorful and delicious dish that can be enjoyed by vegetarians and meat lovers alike.

You will need:

Thai green curry paste
3 cloves garlic
vegetable broth
chicken breast
ginger
coconut milk
brown sugar
1 large aubergine (3 small aubergine)
fish-lemongrass sauce
lime
basil leaves

Preparation:

To begin deep pan over medium heat and add a splash of oil. Once the oil is hot, add the green curry paste and minced garlic to the pan and cook for a couple of minutes, stirring occasionally. This will help to release the flavours and aromas of the curry paste. Next, add the vegetable broth to the pan and bring it to a gentle simmer. If you’re using chicken breast, thinly slice it and add it to the pan at this stage. Allow the chicken to cook through, which should take about 8-10 minutes. After cooking the chicken (if using), you can add the remaining ingredients to the pan. Start by grating in some fresh ginger for an added depth of flavour. Then, pour in the coconut milk, which will give the curry a creamy and rich consistency.

Preheat your oven to 200 degrees Celsius. While the oven is preheating, prepare the aubergine by slicing it into 1 cm thick rounds. Place the aubergine slices on a baking sheet and drizzle them with olive oil. Make sure to coat each slice evenly. After you season the aubergine slices, make sure to transfer them to the preheated oven and roast them for about 25-30 minutes, or until they turn tender and golden brown. Put in the pan.

Finally, add the fish-lemongrass sauce, and lime juice to the curry. Stir well and let it simmer for another 2 minutes to let all the flavours come together. Taste and adjust the seasoning. Finally, tear up some fresh basil leaves and sprinkle them over the top of the curry to add a touch of freshness and aroma. Your aubergine curry is now ready to be served! It pairs well with steamed rice or naan bread. The creamy, flavorful sauce combined with the tender aubergine and chicken will surely satisfy.
