Festive salad
Armenian festive salad is a traditional dish of Armenian cuisine that is often served during celebrations and holidays. It is refreshing and combines different ingredients. The salad usually consists of fresh vegetables. It is always my favourite part of any Armenian dish. This salad is and always has been one of my favourite meals. I like to make a big bowl of it and serve it with just about anything.
Armenian festive salad goes well with a variety of dishes. We can serve it as a side dish to grilled meat or roasted vegetables. Plus, you can enjoy it on its own as a light and refreshing meal. So, if you want to recreate this delicious Armenian salad at home, feel free to gather the ingredients and give it a try. You will need:
5 egg
6 pickled cucumber
2 carrot
2 beetroot
1/4 cup sour cream
salt and pepper
Procedure:
To prepare this salad, start by boiling some eggs until they are fully cooked. Once the eggs are done, carefully peel them and cut them into small 1 cm cubes. You can boil the beets in their skins until they become soft. Once the beets are cooked, remove their skins and cut them into similar 1 cm cubes.
Now it’s time to assemble the salad. Drizzle a little sour cream over the eggs, beetroot, carrot and cucumber pickle. Start the plate by placing a generous amount of chopped eggs on each. Next, add some beets, also diced, to the beets. Then evenly divide the sliced carrot and cucumber pickle into each. Continue and repeat the entire set of layers until you reach the top of the plate. Season the salad with salt and pepper to your taste.
Let the salad sit for about an hour to allow the flavours to fully develop and meld.

Indications – Cough, chronic dysentery, indigestion.
Cautions – Do not take too much. It is better to take the cooked than the raw.
Pickled cucumbers – Property – Sweet, slightly cold; spleen and stomach meridians entered.
Actions – Strengthen the stomach, harmonize the spleen and stomach, promote the secretion of saliva and relieve thirst.
Indications – Diabetes, poor appetite.
