Curry made of red lentils
This exotic recipe, full of fragrant spices, is a good example of how to prepare legumes in an interesting and tasty way. This is what one of them might look like. You can be creative and use any seasonal vegetable. I love dishes that are simple and require little work. One of them is this lentil curry, which cooks itself. Just throw all the ingredients into one pan and look forward to the result. Warm curry is an ideal dish for winter sleet. You will be happy to cook food full of flavours and aromas that are really easy to prepare.
You will need:
3/4 cup red lentils
1/4 medium hokkaido pumpkin
1 teaspoon curry paste
1 teaspoon cane sugar
can of coconut milk
oil
lime
Jasmine rice
(spinach, coriander, basil, parsley…)
Procedure:
Red lentils are relatively quickly cooked and relatively easy to digest. So they do not bloat like other legumes.
It is very popular in India, where the lentils on a plate replace meat because a large part of the population is vegetarian. Rinse the lentils and boil them in water for 15-20 minutes. Cut the pumpkin in half remove it from the spoon and throw it out. Cut it into cubes and cook with chopped in salted water. The pumpkin does not need to be peeled; the skin, which is very stiff in its raw state, softens perfectly after cooking.
After boiling, pour out all the water and mix the boiled pumpkin with a stick mixer. Once you have a boiled lentil and pumpkin, heat a tablespoon of oil in a pan. Add a tablespoon of Thai curry paste and let it simmer briefly in oil. Add pumpkin, and lentils and pour coconut milk over everything. Stew without the lid for a few minutes until the milk is partially reduced. Finally, drizzle with a few drops of lime juice and add the chopped fresh spinach (coriander, basil…). Mix for a minute and remove from the heat. A suitable side dish is jasmine rice.
