Spring Rolls (Chun Juan)
Spring rolls or pancakes are traditional Chinese New Year dishes for folk festivals. They are currently popular throughout China and other places. In addition to being eaten at home, people often use them to entertain guests. They have a long history.
The fillings of spring rolls vary with the seasons, such as shepherd’s fillings, leek fillings, pea fillings, etc.
I like the taste of chives. Whether it is fried or made into fillings, it is a special ingredient to enhance the flavour. Now is the season when chives are on the market. Making it into spring rolls is delicious.
It is crispy and the filling is soft and fragrant. It is so delicious that you can’t stop eating it. You don’t need to use a lot of oil to fry it. It is convenient and quick. If you want to eat it, it is worth trying.
You will need:
100g pork tenderloin
500g spring roll wrapper
130g chives
60g shredded carrots
oil
3g salt
3 tbsp soy sauce
2g Mirin
pepper
8 tbsp cornstarch
1g sugar
Procedure:
Wash and cut the chives into inch-long pieces and grate the carrots. Put the cornstarch in a bowl, add an appropriate amount of water and mix well for later use. Cut the pork tenderloin into strips, add salt, Mirin, a little pepper, cornstarch, pour a little water and mix well. Pour oil into a pan, after heating, add the chopped pork and fry over medium heat, stirring constantly. Fry until the pork turns white, and add soy sauce, salt and sugar.
After a while of sautéing, add an appropriate amount of water, cover the pot and simmer for 2 minutes. Add the chopped carrots, and salt and fry for a while, stirring constantly. Pour the water starch in step 4 to thicken, mix well and turn off the heat. Pour into a bowl and let cool, stir in the chives, sprinkle with pepper and mix well for later use.
Take the spring roll wrapper and lay it flat and then put it in the filling. Roll it up to 1/3. Fold the left and right ends. Just twist it all the way around. Put it in five to six layers of hot oil and fry until golden brown. You can dip it in your favourite sauce while eating, it is very delicious!
Pork – Property – Sweet, salt, neutral; spleen, stomach and kidney meridians entered.
Actions – Tonify kidney, nourish yin, tonify blood to moisten dryness, resolve swelling, tonify qi.
Indications – Dry cough, diabetes, constipation, kidney deficiency, puffiness, body fluid depletion caused by blood dryness, emaciation.
Cautions – It is contraindicated in case of damp heat with phlegm stagnation.
Carrot – Property – Sweet, neutral; lung and spleen meridians entered.
Actions – Strengthen the spleen and promote digestion.
Indications – Cough, chronic dysentery, indigestion.
Cautions – Do not take too much. Better to take the cooked than the raw.
